Fresh or Canned?


Did you know that canned tomatoes can be more nutritious than fresh tomatoes? Studies show that this is true because they are picked red and ripe and processed in a manner that helps retain all its goodness. They can deliver over six times more lycopene than the equivalent amount of fresh tomatoes [lycopene is the most potent of all antioxidants].

The heat used during processing breaks down tomato cell walls allowing the lycopene to be absorbed by the body better. Aside from lycopene, the yummy red fruits are also rich in vitamin C, B complex and minerals such as iron and potassium.

Thanks for this information. I am ashamed to admit that I am approaching my 70's as fast as a downhill bobsled and I didn't know this fact about canned tomatoes being more nutritious than fresh. Good post

I especially like the fire-roasted ones! They acquire a sweetness that simply cooking them does NOT accomplish. Try them, and I think you'll agree! (I'm not paid for this endorsement...I just love to cook and share what works!!)

Isn't that just incredible. It's the same with frozen veggies too because they are flash frozen at the peak of ripeness and flavor. I use canned tomatoes a lot and you just so happened to post a picture of my absolute favorite brand. I don't know if it's the type of tomato or the way they process it but the flavor is phenomenal.

Hey Liza,

I use canned tomatoes to cook pastas as well, nevertheless I prefer to use fresh tomatoes, whenever I find the right type to cook (it tastes better).

Canned tomatoes always take conservatives (even if sodium) which alters a tiny bit the food's taste. A gourmet knows when either fresh or canned tomatoes have been used.
