What to do with Stale Donuts

When you have leftover doughnuts and it's going stale in your refrigerator, what do you do? Don't throw them out just yet, you can turn them into bread pudding and serve it as a snack or breakfast. Here's what you need to do. Preheat your oven to 350 degrees. Grease a small baking dish. Cube the doughnuts and place them in the baking dish. In another bowl, mix together 1 small can of condensed milk, 1 egg, beaten, 1 teaspoon cinnamon, a pinch of salt. You can add fresh fruits or a small can of fruit cocktail if you like. Pour the mixture over the cubed doughnuts and let soak for about half an hour, or even overnight. Bake for 30-40 minutes, or until firm. You can serve them with maple syrup on the side.

Benefit of Veggies to Men

For men 50 years and over, it is best to include vegetables in their diet. Eating vegetables everyday can save them from having prostate cancer, a disease very common to men in their golden years and over. It has been discovered that men who eat enough servings of vegetables each day have an 11% rate against prostate hyperplasia than those who only consume 1/2 a cup of vegetables a week. The antioxidants we get from vegetables block the free radicals on prostate cells.

Know your Chocolate

Chocolate always bring a smile on everyone's face. Every one loves it and there is something hypnotic about it that it's just so hard to resist. And when you're feeling down, try treating yourself with a healthy doze of chocolate. It is a great mood booster because it contains phenylethylamine, a mood regulating chemical naturally found in the brain. Others say, it also helps the brain produce serotonin, a natural anti-depressant. My kids love nibbling on bittersweet chocolates, how about you?

The types of chocolate:

1. Unsweetened chocolate is often referred to as baking chocolate. It is unadulterated chocolate and contains no sugar and it is too bitter to be eaten by itself. Also known as chocolate liquor, it contains 50 t0 58% cocoa butter.

2. Bittersweet chocolate is slightly sweetened chocolate and contains 35% chocolate liquor. This is the type of chocolate popular among bakers because of its intense chocolate taste. Bittersweet and semisweet chocolates are sometimes referred to as 'couverture'.

3. Semi-sweet chocolate is slightly sweeter than bittersweet chocolate and is often used for cooking purposes. It is a dark chocolate with low sugar content.

4. Milk chocolate is defined as mild flavored chocolate containing 10% chocolate liquor and as much as 12% milk solids [milk powder and condensed milk].

5. Cocoa powder is chocolate in powder form. There are generally 2 types of unsweetened cocoa powder; natural cocoa and dutch-processed. The natural cocoa powder lacks the chocolate color but will provide you with chocolate flavor. Dutch processed cocoa makes baked products darker in color. Dutch cocoa is slightly milder in taste and is frequently used for chocolate drinks such as hot chocolate due to its ease in blending with liquids.

6. White chocolate does not contain chocolate liquor. It is made from cocoa butter, sugar, flavoring and milk.

7. Compound chocolate is cocoa and vegetable fat combined. It is primarily used for candy bar coatings, but because it does not contain cocoa butter, it is not allowed to be called chocolate in some countries.

Choco tidbits:
And because chocolate is believed to be good for the heart, you no longer need to feel guilty if you enjoy a piece of dark chocolate once in a while. This great news does not give you a license though to eat as much chocolate as you'd like.

The Nutritious Blemishes

When we buy fruits and vegetables, we closely examine them and pick the ones with perfect skin. I was surprised when I read in one article that the blemishes we see on fruits and vegetables mean these produce are more nutritious.

The dark dots on green bell peppers mean they have more vitamin C than a green pepper without spots. Instead of thinking that the green pepper is past its prime, the small dark dots mean the vegetable is sweeter and less acidic. Dry cracks on tomatoes mean they have more vitamin B. A tomato with healed cracks near its stem does not mean it is old. It grew in dry conditions that made it twice as high in B complex vitamins than spotless tomatoes.

Bananas that are yellow with little brown speckles are richer in magnesium than the flawless looking ones. The small brown spots on papayas mean they have more lycopene. These small oval brown marks reveal that the fruits is, sweeter, tastier and healthier. In fact, a spotted papaya contains higher percentage of antioxidant lycopene than an unblemished one.

So, the next time you buy fruits and vegetables, don't ignore the spotted ones. ^_^

Get Rid of Sweat Stains

It's the month of March and it is starting to get warmer. You suddenly notice sweat stains on your new tee and you know it's got to go. Here's how to do it, sprinkle each spot with 1 teaspoon dry meat tenderizer. Scrub the area with a toothbrush until a paste forms. Let it sit for 1 hour, then launder in the hottest water that is safe for the fabric. The papain in meat tenderizer breaks down the chemical bond that forms when acid (from perspiration) touches salt (from the aluminum in deodorant). Doing so can save you a lot of money from buying stain removers.

My Kid in a Costume Tag

Geng tagged me on this. The photo was taken February of 2004 during my son's Family Day activity in school. They did an Ifugao flower dance and won the contest. The costume was a simple black shirt and shorts with "bahag" ( a loin strip worn by the Ifugaos). I don't remember exactly how much I paid for it but it wasn't much.

My Kid Is In A Costume Tag

  2. Share with us a brief story behind the picture.
  3. Tell us where you got the costume and for how much.
  4. Pass it on to people you like.

Why you can't freeze lettuce?

A lettuce wilts after it has been frozen because it has a higher water content than meat. When vegetables and fruits are frozen, the cells crystallize and this stops chemical activity, which is what makes food go bad. These water crystals can also puncture the structure of the cell, making the vegetables lose its crispness.

Herbal Infusion

When you steep herbs in hot water they release their alluring flavors, this is the technique used in making tea. When you infuse rosemary, sage or thyme into olive oil, you make a fragrant condiment to drizzle on pizzas, pastas or breads.

To infuse herbs, heat the oil and let simmer. Add whole spices, sprigs or leaves. Cover, remove from heat to steep for thirty minutes, then strain. Pour the oil in decorative bottles when it gets cold. This make wonderful gift ideas to friends and relatives during Christmas. For a dramatic effect, you can insert the sprig or the leaf in the bottle.

Peppercorn, Orange Peel & Cinnamon

Peppercorn, when made into soup is very good for weight loss, for warming the body and to expel phlegm. Orange peel tea is said to cure bad breath, common flu, arteriosclerosis, hypertension, and to help improve the skin and to relieve constipation. Cinnamon is good for diabetes. Steep cinnamon sticks in hot water for a soothing tea to help lower the blood sugar level.

Berry Wisdom

To keep strawberries fresh do not wash them until you are ready to eat them. It will be wise to store them in the refrigerator in a plastic container with a dry paper towel to soak up any juice. When you are ready to use them, wash the berries gently with cool water. Allow them to reach room temperature before serving.

Taking Care of Herbs

Herbs, like any other plants need tender loving care. They need special attention. They can be grown in container gardens, hanging baskets and window boxes. Taking care of them is easy, they do not want too much sunlight and make sure you water them at least twice daily. Using the water you used from washing rice will make them healthy too. Talking to them like you do with your flowers and orchids will also do them good. They look small and will make your patios, balconies or terraces smelling good. Herbs make nice presents too.

Too Much Caffeine

Caffeine is a central nervous system stimulant which temporarily wards off drowsiness and restores alertness. We all know that too much of this is not good to the body. I am a coffee and tea lover and I take at least 2 mugs of coffee everyday. I am not much into drinking soda but I like the taste of citrus soda. I never realized that it contains more caffeine than the regular soda until I came upon one article in the newspaper. I thought citrus soda has lesser caffeine content.

Zespri is Kiwi

The kiwifruit is an edible berry. It originated in China but was commercially developed in New Zealand and Australia. It was originally known as the Chinese Gooseberry, the fruit was renamed in the mid 20th century for marketing reasons, first melonette and later on to kiwifruit. The latter was chosen for the indegenous New Zealand bird, kiwi, which is one of the country's national symbol. A few years ago, they changed the name of the fruit again to Zespri to differentiate them from the other kiwis in the world.

Photo Hunt - Different

This week's theme is DIFFERENT. This one was a toughie for me and I had to really think how I could present DIFFERENT. I was out buying some stuff the other day when my youngest asked for a Shawarma, this gave me an idea. Shawarma is a popular dish and fast-food staple across the Middle East, and is consumed across the rest of the world as well. It is typically made of pork meat, chicken, beef or lamb.
Shawarma is made up into a sandwich with pita bread or rolled up in lafa (a sweet, fluffy flatbread) together with vegetables and a dressing (tahini). A traditional Shawarma looks like this....
In the Philippines, Shawarma is not only served as a sandwich, as rice is the staple food of the Filipinos, this Shawarma kiosk has a different way of serving it, their Shawarma is served with Java rice.

Cellphone Warning

According to a hearing specialist, a person who uses his/her cellphone for more than one hour everyday is in danger of damaging his/her ears. However, studies are still being made at present to prove the connection of cellphones on damaging our hearing but limiting the use of the gadget can help a lot.

Ketchup Fights Bad Cholesterol

Ketchup is a delicious and nutritious condiment that is a staple in everyone's home. The magic ingredient found in ketchup is lycopene, a compound which gives the wonderful red color to a tomato. It is also an antioxidant which helps fight LDL or bad cholesterol and may help lower the risk of prostate cancer. A study shows that consuming at least 6 teaspoons of ketchup daily can make your cardiovascular system strong.

Corned Beef Sinigang

Sinigang is a famous dish in the Philippines, it is typically sour and usually prepared with tamarind. A few years ago, a good friend invited us to dinner and he ordered corned beef sinigang. That was the first time I've heard of it and was really curious on how it tastes. It was so good so I tried making my own version.

1 can Corned Beef (any brand is ok but I prefer the chunky ones)
1 packet Sinigang Mix
4 cups of water
3 tomatoes, halved
1 onion, quartered
1 eggplant, sliced diagonally
1 radish, sliced diagonally
3 pieces okra (lady finger), halved
2 pieces long green chili pepper
4 small pieces of gabi (taro), peeled
1 cup kangkong (swamped cabbage) leaves
12 strings beans, cut into 3-inch long pieces

1. Bring the water to boil. When the water starts boiling, throw in the taro. Simmer until soft. Add the onion and tomatoes.
2. Add in the sinigang mix. Stir.
3. When the onion and tomato have softened, add the Corned Beef.
4. Bring to a boil, let simmer, then add the string beans and radish. When the radish and green beans are almost done, add the eggplant, then the okra and green chili pepper. Simmer for 2 minutes. Turn off the heat then add the kangkong leaves. Cover for a few minutes.
