Beautifully Browned Meat
Here's a great tip on how to achieve a beautifully browned meat when you're cooking steak. Blot excess moisture from the meat by patting it dry with a clean cloth or paper towel before cooking. When you sear wet meat, it lowers the temperature of the hot pot and prevents it from caramelizing. When you pat it dry, you'll get that yummy-looking crispy golden brown on the outside and juicy in the inside steak.

What a great tip! I've never heard it before, but it sure does make sense, thanks! :-D
Nice advice. Thank you.
That was a good idea. I didn't realized I can do this before. As a result I always skip a big step away after put the steak into pan.
